1/4 cup PURA Thickened Cream or PURA Light Cream (tub)
2 teaspoons grated orange rind
PURA Thickened Cream to serve
Preheat oven to 180 deg C. Grease and flour 6 x 1 cup muffin pans.
Place the dates and water in a small saucepan, bring to the boil. Stir in the bicarb soda and remove from the heat. Allow to cool.
Sift the flour and cocoa together.
Cream the butter and sugars until light and fluffy. Beat in eggs one at a time, stir in the vanilla. Add the sifted flour, dates, choc bits, PURA Cream and orange rind. Mix gently using a large metal spoon until the mixture is well combined.
Spoon mixture into the prepared pan and bake 25-30 minutes, or until cooked when tested with a skewer.
