Sticky Date Chocolate Puddings
Ingredients
- 250g dates, roughly chopped
- 1/2 cup water
- 1 teaspoon bicarb soda
- 1 cup self raising flour
- 2 tablespoons cocoa
- 150g butter
- 1/2 cup castor sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 teaspoon vanilla essence
- 1/2 cup dark choc bits
- 1/4 cup PURA Thickened Cream or PURA Light Cream (tub)
- 2 teaspoons grated orange rind
- PURA Thickened Cream to serve
Method
- Preheat oven to 180 deg C. Grease and flour 6 x 1 cup muffin pans.
- Place the dates and water in a small saucepan, bring to the boil. Stir in the bicarb soda and remove from the heat. Allow to cool.
- Sift the flour and cocoa together.
- Cream the butter and sugars until light and fluffy. Beat in eggs one at a time, stir in the vanilla. Add the sifted flour, dates, choc bits, PURA Cream and orange rind. Mix gently using a large metal spoon until the mixture is well combined.
- Spoon mixture into the prepared pan and bake 25-30 minutes, or until cooked when tested with a skewer.
- Serve warm with remaining PURA Thickened Cream.
