Feta Potato Mash
- 4 potatoes, peeled and chopped
- 1/4 cup PURA Light Start, warmed
- 100g South Cape Reduced Fat Tasmania Feta, crumbled
- 40g South Cape Parmesan cheese, grated
- 2 tablespoons finely snipped chives or parsley
- freshly ground black pepper, to taste
Adding hot milk to mash ensures it stays piping hot and extra creamy. Also try mixing in grated cheddar or even crumbled blue cheese for adults.
